Celebrating Fred DeLuca: The Mentor Behind Sam Ballas’ Growth Philosophy
By Sam Ballas
On Fred DeLuca’s birthday, I wanted to take a moment to acknowledge the profound impact Fred had in shaping my journey as a founder and CEO in the restaurant space. Fred was no ordinary mentor—he didn’t just share his successes; he was open about his mistakes, too. It was through these candid lessons that I learned some of the most valuable business philosophies that continue to shape East Coast Wings + Grill today.
Fred DeLuca was a significant influence in my decision to grow East Coast Wings + Grill into a lifestyle brand rather than chasing rapid expansion. Early in the brand’s development, Fred encouraged me to take a more thoughtful approach growth – focusing on long-term success rather than short-term gains. His advice led me to concentrate on getting to 20 stores first, and then assess how that growth impacted the brand and myself personally. That conversation marked a turning point for me and my leadership, shaping a more deliberate and responsible franchising strategy for East Coast Wings + Grill.
I still remember the last time Fred and I crossed paths. He turned to his sister and said, “This kid hasn’t grown big, but he’s grown smart.” That comment resonated deeply with me, and I credit much of my measured approach to Fred’s guidance. His mentorship wasn’t just about specific strategies—it was about sharing his experiences, highlighting both what to avoid and what to pursue.
The Lessons Fred Taught Me:
- Operational Integrity: One of the most valuable lessons Fred taught me was about operational excellence—establishing a “break-even” calculator and putting together field inspection forms to maintain high standards across all locations. As the “king of EBITDA,” I’ve seen firsthand how strong unit-level economics are a direct result of this operational integrity.
- Strategic Market Entry: Fred emphasized the importance of strategically choosing where to expand and how to approach new markets with caution and foresight.
- How to Control Your Space: He taught me the value of maintaining control over my brand’s space – ensuring growth always aligned with our core values, operational excellence, and our long-term vision, especially in the competitive full-service restaurant industry.
Fred’s mentorship continues to influence me today. My decision to prioritize smart, responsible, and sustainable growth over rapid expansion is a testament to his wisdom. Fred knew the importance of learning from both success and failure, and for that, I’ll always be grateful.
